Recipe: Hearts of Palm Salad

Michael, this recipe does not have goat cheese, but I'm sure you can easily add it.

Hearts of Palm Salad

Salad:
6 cups greens (mixed greens, endive, radicchio, arugula)
1 cup hearts of palm, drained and sliced into 1/2-inch rings
1 cup cherry tomatoes, quartered
Dressing:
1/4 cup balsamic vinegar
1/4 cup olive oil
2 teaspoons Dijon mustard
1 Tablespoon oregano, chopped (1 teaspoon dried)
1 garlic clove, minced
salt and pepper

In a salad bowl (or individual salad bowls), combine the greens, hearts of palm and cherry tomatoes.

In a small bowl, whisk together the balsamic vinegar, olive oil, dijon mustard, oregano, garlic, salt and pepper. Drizzle the dressing over the greens and lightly toss. Serve immediately.

Preparation Time: 7 minutes Serves: 6
