Recipe: Heinz Picnic Potato Salad (using Sure Bet Vinaigrette)

HEINZ PICNIC POTATO SALAD

3/4 cup Heinz Sure Bet Vinaigrette (recipe follows)
1/2 cup mayonnaise
2 tablespoons Dijon-style mustard
2 1/2 pounds potatoes, cooked, peeled, diced
1/2 cup finely chopped red onion
1/2 cup diced celery
1 teaspoon salt
2 hard-boiled eggs, peeled, chopped

Whisk vinaigrette together with mayonnaise and mustard.

Combine remaining ingredients in a large bowl and add vinaigrette mixture. Toss well. Cover and refrigerate at least four hours or overnight.

HEINZ SURE BET VINAIGRETTE
Makes 1 1/2 cups

"Use part of the vinaigrette for this recipe and the rest as a delicious salad dressing."

1 cup olive oil
1/2 cup Heinz apple cider or white vinegar
2 teaspoons Dijon mustard
1 teaspoon dried dill weed
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Combine ingredients in jar; shake vigorously. Refrigerate remaining dressing.

Makes 10 servings
