ROSEMARY BAKED POTATO SLICES
6 baking potatoes scrubbed
1 red bell pepper
1/4 cup olive oil
1/2 teaspoon dried rosemary
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup water
Preheat oven to 375 degrees F.
Peel potatoes, if desired. Cut into 1/4-inch thick slices. Halve pepper lengthwise; seed and slice into 1/4-inch thick slices.
In large bowl, mix together potatoes, red pepper, olive oil, rosemary, salt and pepper.
Spray a 13x9-inch baking dish with nonstick cooking spray. Spread potato mixture into pan and sprinkle with water.
Cover and bake in oven for about 45 minutes. Uncover and bake 10 minutes longer or until potatoes are tender. After cooking, broil, if desired, for browner top.
Makes 6 servings
