Recipe: Henry's Honey Cookies by Florida's first lady Spessard Holland (1940's)

HENRY'S HONEY COOKIES
by Florida's first lady Spessard Holland

1 1/4 sticks butter
1 egg, unbeaten
2 1/2 cups old fashioned oatmeal, uncooked
1 cup honey
1/2 cup flour
1 teaspoon ground mace
1 cup pecan meats, broken in small pieces
1 teaspoon baking powder

Cream butter and add honey. Beat well and add unbeaten egg. Beat well again. Add flour which has been sifted with baking powder and mace. Add oatmeal and stir to mix well. Drop by teaspoonful on cookie tin. Sprinkle each cookie with broken nut meats.

Bake in oven 300 degrees F. Bake about 25 minutes.

This makes about 60 cookies.
