Recipe: Creamy Curried Spinach (Rival Crock Pot recipe)

CREAMY CURRIED SPINACH

30 ounces frozen spinach, thawed
1/2 cup chicken stock
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons curry powder
2 tablespoons butter or margarine, melted
1/4 cup heavy (whipping) cream
1 teaspoon lemon juice

Combine the spinach, chicken stock, onion, garlic, curry powder and butter and in the crock pot.

Cover crock pot and cook on LOW 3-4 hours or on HIGH for 2 hours.

Thirty minutes before the end of the cooking time, add the heavy cream and lemon juice. Mix to combine. Replace the cover and finish cooking.

Makes 8 servings
