Hello Lily:

I uses to made the Beef Ho Fan and it's the same except the indregients.

1st: Stir fry Ho Fan Noodles in a non-stick pan about 10-15 mins and add some dark soy sauce and let it coat well. Set it aside.

2nd: Beef: Flank steak cut into bits size and marinate it with garlic, chinese wine, soy sauce, black pepper and 2 tsp of corn starch for about 1/2 to 1 hour. I usually cut green onion the white part into lengthwise (very fine like the restaurant). Heat up wok, add oil and stir fry green onion slightly about 3-5 mins and add beef. Cook till the beef is done and add bean sprout and the noodle. I usually add about 2 tbsp of oyster sauce and a little more cornstarch and water to thicken the sauce.

As for seafood or other variety, it is the same except no oyster sauce, but with a egg (well beaten) and add to the sauce.

I hope it will help you, I do not follow receipe but trial and error while I cook this dish. This is my son's favorite.
