SWEET YEAST DOUGH
1 LB LOAF:
1/2 cup heavy (whipping) cream
2 tbsp evaporated milk
1 egg yolk
4 tbsp butter or margarine
2 tbsp sugar
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 2/3 cups bread flour
1 tsp yeast
1 1/2 LB LOAF:
3/4 cup heavy (whipping) cream
3 tbsp evaporated milk
2 egg yolks
6 tbsp butter or margarine
3 tbsp sugar
3/4 tsp salt
3/4 tsp ground cinnamon
3/4 tsp ground nutmeg
2 1/2 cups bread flour
1/2 tbsp yeast
2 LB LOAF:
1 cup heavy (whipping) cream
1/4 tbsp evaporated milk
3 egg yolks
8 tbsp butter or margarine
1/4 cup sugar
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
3 1/3 cups bread flour
2 tsp yeast
Place ingredients in order for your bread machine. Process on dough cycle, shape as desired, rise, then bake in oven.
Notes:
I find that I do not like allowing the dough to knead or rise a second time in the machine (DAK or Welbilt ABM 100) and recommend that you turn the machine off after approximately 1 hour and use the dough then. If the dough it too sticky to roll, simply add flour a little at a time until it maybe handled. Don't overflour. Remember that ovens vary and that cooking times may also vary. As with any baking, keep an eye on the oven to avoid burning.
