Recipe: Homemade O'Henry Bars (using Special K or Rice Krispies cereal)

HOMEMADE O'HENRY BARS

1 cup corn syrup
1 cup sugar
1 pinch salt
1 cup chunky peanut butter
5 cups Special K or Rice Krispies cereal
1 cup peanuts (optional)*
1 (12 oz) pkg chocolate chips

In a large saucepan, heat sugar, corn syrup and salt until boiling. Add peanut butter and stir until boiling again.

Remove from heat. Pour in cereal and nuts, if using, and mix until coated. Spread in a buttered 9x13-inch pan and press. Cool.

Melt chocolate chips over double boiler and spread on cooled peanut cereal mixture. Cool, then cut into bars.

*If you choose not to use peanuts, increase cereal to 6 cups.

Makes 16 bars
