Recipe: Old Fashioned Banana Cream Pie (with cooked custard, topped with whipped cream)

1 1/2 cups plus 1 tablespoon sugar, divided use
1/2 cup flour
2 eggs
1/8 teaspoon salt
2 cups milk
1 tablespoon butter
2 teaspoons vanilla, divided use
3 bananas
1 (9-inch) baked pie shell
1 (8 ounce) carton heavy (whipping) cream
Combine 1 1/2 cups sugar, flour, eggs and salt in a medium saucepan. Beat with hand beater or wire whip until well mixed. Add milk gradually and continue beating until smooth. Cook over medium heat until mixture thickens, stirring constantly. Remove from heat. Stir butter and 1 teaspoon vanilla into hot mixture. Place in refrigerator.
Slice bananas into cooked pie shell. Remove custard from refrigerator and spoon over bananas.
Whip whipping cream until soft peaks form. Gradually add the remaining 1 tablespoon sugar and whip until stiff. Fold in remaining 1 teaspoon vanilla. Spread over pie, sealing edges. Refrigerate and serve very cold.
Makes 1 (9-inch) pie, 6 servings
