YELLOW CAKE
- Rauby Groen Spencer, 1st Place, 1986 Iowa State Fair, Yellow Cakes
2 cups plus 3 tablespoons flour, sifted
5 Tablespoons corn starch
1 1/2 cups sugar
3 1/2 teaspoons salt
2/3 cup shortening
3/4 cup milk
3 eggs
1/2 cup milk
1 teaspoon lemon extract
1 teaspoon butter extract
Frosting (recipe follows)
Stir together into large mixer bowl flour, sugar, baking powder and salt. Add shortening and the 1/4 cup milk. Beat 2 minutes on medium speed. Add eggs, remaining 1/2 cup milk and extracts, beat 2 more minutes at medium speed. Pour into 2 greased and floured (8-inch) round cake pans.
Bake in 350 degree F oven 25-30 minutes or until done. Cool on rack 10 minutes. Remove from pan; cool completely before frosting.
FROSTING
5 cups powdered sugar, sifted
3/4 cup shortening
1/2 cup milk
1 tsp butter extract
1/4 tsp salt
Mix all ingredients for the frosting together and beat until smooth.
