Recipe: Honey Glazed Squash (microwave, 1980's)
Misc.HONEY GLAZED SQUASH
"A pleasant and unusual way to serve acorn squash or one of the other hard-skinned squashes."
2 acorn squashes
1 cup chicken broth
1/4 cup honey
2 teaspoons cornstarch
1 teaspoon grated orange rind
1/2 teaspoon ground ginger
Raisins (for garnish)
Puncture each squash in 2 places with a sharp knife. Place them in a microwavable dish and microwave on HIGH (100 percent) for 7 to 8 minutes, turning them over after 3 1/2 to 4 minutes. (Time may vary with different microwaves and size of squash.)
Remove the squashes from the microwave and allow to stand for 5 minutes. Peel and seed the squashes and cut them into 1/2-inch slices.
Combine the chicken broth, honey, cornstarch, orange rind and ginger in a 3-quart microwavable casserole. Microwave on HIGH (100 percent) for 4 minutes or until boiling and thickened, stirring twice.
Add the squash slices. Cover and microwave on HIGH (100 percent) for 4 to 8 minutes until the squash is glazed, stirring every 2 minutes.
Serve topped with raisins.
