Recipe: Hoppin' John w/Sausage

Hoppin' John

1/2 pound sausage
1 small onion, coarsely chopped
1/2 green pepper, coarsely chopped
1/2 red pepper, coarsely chopped
1 clove finely chopped garlic
1 tablespoon vegetable oil
1/4 teaspoon paprika
1 teaspoon chili powder
1 can (16 oz) black-eyed peas
2 cups cooked rice
1 tablespoon lemon juice

Heat oil in large, heavy skillet. Crumble sausage into skillet and cook briskly until browned. Add onion, peppers, and garlic to skillet with sausage. Sprinkle with paprika and chili powder; cook until vegetables are tender. Pour off grease. Add peas, cooked rice and lemon juice, mixing well in skillet. Reduce heat and simmer for about 10 minutes. Dish should be moist.
