LUBY'S BAKED PORK CHOPS
8 boneless center cut pork chops (6 to 8 oz each)
1 cup milk
2 extra-large eggs
2 tsp salt
1 tsp ground black pepper
2 1/2 cups fine, dry bread crumbs
1 tbsp seasoned salt
1 1/2 tsp garlic powder
1 cup all-purpose flour
Preheat the oven to 350 degrees F. Lightly grease a shallow baking pan large enough to hold the pork chops in a single layer.
Tenderize the chops with a meat mallet to 1/2-inch thickness.
In a shallow bowl, whisk together the milk, eggs, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper until well blended.
In a separate shallow bowl, mix together the crumbs, seasoned salt, garlic powder, the remaining salt and pepper. In another shallow bowl, place the flour.
Coat the meat with the flour, shaking off any excess. Dip the floured pork chops into the milk mixture and then into the bread crumbs, coated evenly. Place the breaded chops in the baking pan.
Bake the pork chops in the preheated oven for 20 to 22 minutes or until the meat is cooked through and the juices are clear.
