Note from source: This recipe is very much like Milestone's. Has white cheddar, parmesan, spinach, artichoke, cream cheese etc & is SO yummy! but I cut the artichoke SO finely that you don't notice it (and it has yummy parmesan & aged chedder). Also, I do put garlic in simply because we LOVE garlic! And the bread crumbs really don't make it crunchy...they just add to it. It is SO good - dh laughs when people ask for recipes because I go by what I feel like...but these are the basic ingredients just add/subtract what you like/don't like
1 pkg chopped frozen spinach, thawed and squeezed
1 can (14 oz) artichoke hearts, drained and very finely chopped
1/2 cup white cheddar cheese, grated
1 cup mayonnaise
1 clove garlic, chopped (usually use more)
dash of lemon juice
cream cheese, softened (about 1/4 of an 8 oz. pkg or less)
1/8 cup bread crumbs
dash of pepper
1/2 cup grated parmesan (use the good stuff if you really want to impress - not the dried bought on shelf stuff)
some green onions (however many you want)
Combine all this the night before and let sit in fridge.
TO SERVE:
Put in oven proof dish and bake at 400 degrees F for 15-20 minutes or heated through.
Serve with crackers, veggies, bread etc.
