QUICKIE QUESADILLAS
Adapted from source:Healthy Eating for Life for Children by Amy Lanou, Ph.D.
Your favorite hummus recipe or buy some ready made (I used roasted red pepper hummus from this site)
8 corn or wheat tortillas
1/2 cup chopped green onions
1/2 to 1 cup your favorite salsa
Spread a tortilla with 2-3 Tablespoons of hummus and place in a large non-stick skillet over medium heat. Spoon half as much salsa and sprinkle with some green onion on top of the hummus.
Top with second tortilla and cook until the bottom tortilla is warm and soft, 2-3 minutes. Turn and cook the second side for another minute. Remove from the pan and cut in half. Repeat with remaining tortillas.

This is sooo good! And so easy too! When you heat these combinations up, the hummus actually gets that melty, oozy, texture, similar to cheese. Frankly, I did not miss the cheese!
