Recipe: Hot Water Cornbread Pancakes

Hot Water Cornbread Pancakes
Makes about 12 cakes
1 1/2 cup corn meal
3 tbsp. white flour
1 1/2 tsp. salt
1/2 tsp. sugar
1 1/4 cup boiling water
Heat a griddle until hot (400 F./200 C). Grease with butter or drippings
2Mix ingredients into a batter and drop onto the griddle as pancakes.
Cook until edges are golden brown. Turn and allow 2-4 minutes for the cakes to cook through.
Serve immediately, or reserve in warm oven until all the batter is used.
Serve with butter, maple syrup or blueberry sauce.
