Recipe: Breakfast Bars (using oats and molasses, Marlboro Country Cookbook)
Breakfast and BrunchBREAKFAST BARS
1/2 cup butter or margarine, softened
1 1/4 cups brown sugar, packed
2 eggs
1/3 cup molasses
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups oatmeal, uncooked
1/2 cup walnuts, chopped
1 cup raisins, dried cherries, or dried cranberries
1 cup semisweet chocolate chips
Combine butter, sugar, eggs, and molasses in a large mixing bowl.
Stir together flour, soda, salt and cinnamon; add to first mixture and stir well. Stir in oatmeal, walnuts, raisins, and chocolate pieces. Spoon into a greased 13x9-inch baking pan.
Bake in a 400 degree F oven for 12-15 minutes or until done. Cool. Cut into bars and serve.
Makes 2-3 dozen bars
