Recipe(tried): Christmas Morning Breakfast 2009 - Holiday Breakfast Strata (Make Ahead)

Here is the delicious recipe for a breakfast strata that I will be serving Christmas morning with Morning Potatoes, Crispy Bacon, Biscuits and Preserves, coffee and juice.

HOLIDAY VEGETABLE STRATA

2 tbsp. olive oil
2 leeks, white and light green parts, finely chopped
3/4 lb. mushrooms, sliced
salt and pepper (to taste)
2 garlic cloves, minced
1 Challah loaf (remove crusts-dry out one day on baking sheet at room temperature. Cut up in chunks and set aside.)
2 cups torn spinach leaves
2 cups shredded cheddar cheese, divided use
1 cup chopped pimientos
1 jar artichokes, drained
4 large eggs
3 1/2 cups milk
1/4 cup fresh chopped parsley
2 tsp. whole grain mustard
2 tbsp Parmesan cheese

Saute leeks in oil until golden, add mushrooms, cook 5 minutes; add garlic. Season with salt and pepper. Cook 2 more minutes.

Grease a 9x13-inch baking pan, place half of bread, spoon leek mixture on, layer with pimiento and artichoke, scatter spinach evenly over. Sprinkle 1 cup cheddar cheese. Place remaining bread on top.

Combine eggs, milk, parsley, mustard, remaining 1 cup cheddar cheese and salt and pepper. Pour over bread. Sprinkle with Parmesan cheese. Cover with foil and put in refrigerator overnight.

AN HOUR BEFORE BAKING:
Remove from fridge. Uncover and bake at 350 degrees F for 45-50 minutes. Serve warm or at room temperature.

Serves 6-8
