CHICKEN JAMBALAYA

This dish was served to banquet parties at the Heidelberg Hotel.
1 cup chopped onion
1 cup chopped green bell pepper
2 cloves garlic, minced
2 tablespoons salad oil
1 cup diced cooked chicken
1 cup diced ham
12 pork sausage links, sliced
2 cans (16 oz each) tomatoes
1 cup rice (raw)
1 1/2 cups chicken broth
1/2 teaspoon thyme
1 teaspoon salt
1 tablespoon chopped parsley
Preheat oven to 350 degrees F. Grease a 3-4 quart covered casserole.
Saute onion, green pepper, and garlic in hot oil in skillet, stirring frequently until tender.
Stir in meats and cook for 5 minutes.
Add all remaining ingredients and place in greased casserole dish.
Cover dish and bake at 350 for 1 hour.
