I couldn't find canned lemon pie filling, so I used a large Jello lemon pudding/pie filling mix. After cooking the filling and cooling it to room temperature, I mixed it with the ricotta cheese. Then I used the mixture as a filling for cream puffs for a luncheon -- and it was a terrific hit!
