Recipe(tried): Indonesian Chicken and Szechwan Noodles

Indonesian Chicken

The longer it cooks, the better it is! If you wish, add more garlic, ginger, and soy. Serve with Szechwan Noodles.

3/4 cup honey
1/2 cup soy sauce
1/4 cup chopped garlic
1/2 cup grated fresh ginger root
3-4 dozen chicken wings OR 3 lbs chicken quarters
3 Cornish Game Hens, quartered

Warm honey and then mix with the soy sauce, and garlic. Pour over hens/wings in shallow baking pan, make sure seasoning covers hens by 1/4-inch or add brandy till covering chickens by 1/4-inch. Cover pan with foil tightly. Bake 3 hours in a preheated oven at 325F, then uncover and bake for 45 minutes more. As it cooks longer it'll only get better!

Szechwan Noodles
Good with the Indonesian Chicken. These can be served hot, or cold, or at room temperature.

1/2 cup rice vinegar
1/2 cup soy sauce
1/4 cup fresh ginger root
1/4 cup ground Szechwan peppercorns
1 bunch scallions, chopped
12-14 garlic cloves, minced
2 1/2 tablespoons sesame tahini (a mid eastern ingredient)
1-2 tablespoons unflavored olive oil
2 teaspoons sugar
3/4 teaspoon hot pepper flakes
1/2 teaspoon salt
1 lb. cooked narrow noodles

Put all ingredients except noodles in food processor; process well, Put sauce and noodles in bowl, mix well by folding, not mixing, Cover and refrigerate.
