Here's our favorite easy rice pudding recipe:

Minute Rice Pudding

In saucepan, gradually stir together:

1 package (3 ounces) vanilla pudding (not instant)
other flavors are good too - chocolate, banana, coconut, butterscotch, lemon!
4 cups milk (can use low fat or skim)
1 egg, well beaten

Add:
1 cup Minute (instant) Rice
1/4 cup raisins

Stir over medium heat until mixture just comes to a boil.
Stir in (adjust or change spices to match flavor of pudding):

1/4 teaspoon cinnamon
1/8 teaspoon nutmeg

Cool 5 minutes - stirring twice. Serve warm or chilled.
