Recipe: Dinner Rolls (including instructions for Welbilt/DAK, bread machine dough cycle)

1 POUND RECIPE:
1/2 cup water (for Welbilt machine add 1 tablespoon more water)
1 egg
2 cups all-purpose flour
1 teaspoon salt
2 tablespoons butter or margarine
2 tablespoons sugar
2 tablespoons nonfat dry milk powder
1 1/2 teaspoons Red Star brand active dry yeast (for all machines)
2 tablespoons butter or margarine, melted
1 1/2 POUND RECIPE:
3/4 cup water (for Welbilt/Dak machines add 2 tablespoons more water)
1 egg
3 cups all-purpose flour
1 1/2 teaspoons salt
3 tablespoons butter or margarine
3 tablespoons sugar
3 tablespoons nonfat dry milk powder
1 1/2 teaspoons Red Star brand active dry yeast for all machines (except 1 1/2 pound Welbilt/Dak machines use 2 teaspoons yeast)
2 tablespoons butter or margarine, melted
Place all ingredients except melted butter in bread pan, select Dough setting, and press Start. When dough has risen long enough, the machine will beep.
Turn off bread machine, remove bread pan, and turn out dough onto a floured countertop or cutting board. Gently roll and stretch dough into an 18-inch rope.
Grease a large baking sheet.
FOR 1 1/2 POUNDS OF DOUGH:
With a sharp knife, divide dough into 12 to 18 pieces.
FOR 1 POUND OF DOUGH:
With a sharp knife, divide dough into 8 to 12 pieces.
Form dough into desired roll shapes. Place rolls on baking sheet; cover and let rise in warm oven 30 to 45 minutes until doubled. (Hint: to warm oven slightly, turn oven on Warm setting for 2 minutes, then turn it off, and place covered rolls in oven to rise. Remove sheet from oven when ready to preheat the oven.)
Preheat oven to 400 degrees F.
Brush rolls with melted butter.
Bake for 12 to 15 minutes until brown. Remove from oven; serve warm.
1 1/2 pounds of dough makes 12 to 18 rolls
1 pound of dough makes 8 to12 rolls
