ISRAELI COFFEE CHICKEN
1 large broiler-fryer chicken, cut up
3/4 cup coffee
1/3 cup ketchup
3 tbsp soy sauce
2 tbsp lemon juice
2 tbsp wine vinegar
1 tbsp olive oil
2 tbsp brown sugar
Place chicken pieces in a shallow baking dish.
Mix the remaining ingredients in a saucepan; bring to a boil. Reduce heat and simmer 5-10 minutes to reduce. Pour over chicken in baking dish.
Bake at 350 degrees F uncovered for 1 hour. Baste.
Good served cold as well as hot.
Makes 3-4 servings
