HONEY-GLAZED CORNISH HENS
4 Cornish game hens (1 lb each)
3/4 cup Lea & Perrins white wine
Worcestershire sauce
5 tbsp Honey
TO SERVE:
watercress
orange zest
hot cooked rice
Preheat oven to 350 degrees F.
Split hens in half; rinse well under running water and pat dry. Place hens on a rack in a shallow baking pan.
In a mixing bowl, mix White Wine Worcestershire Sauce and honey and brush over hens. Bake 35 to 40 minutes, basting occasionally, until hens are done and golden.
Garnish with watercress and orange zest and serve on a bed of hot rice.
