My favorite new dish is GRILLED CHICKEN BREAST WITH BACON
I use a rotisserie with the basket attachment. I actually use this with everything I cook on the grill. It makes it so much easier than turning the food and everything cooks evenly on the grill.
I preheat the grill with all the burners on high. This brings my grill up to around 600. I also set my oven on high broil to be heating up.
I take a thawed boneless chicken breast and place two or three strips of hickory smoked bacon on one side of the breast. I use toothpicks to attach the bacon to the chicken. I then place the chicken breast in the rotisserie basket. I turn the burner that is under the chicken down on low, leaving the other two on high.
I let the chicken turn for 20 minutes. As the bacon cooks and the chicken is turning the grease coats the chicken and makes a wonderful flavor.
Once the chicken is cooked I remove it from the grill and place it on an oven safe plate. I cover the chicken with Kraft four cheese Mexican mix, plain (not the Mexican flavored cheese). I then place it in the broiler until the cheese has melted.
This has become a favorite dish in our house.
