Recipe: Magical Mediterranean Marinade

MAGICAL MEDITERRANEAN MARINADE

"This marinade is great on vegetables as well as meats."

4 tablespoons extra-virgin olive oil
4 tablespoons fresh rosemary leaves, chopped fine
2 tablespoons fresh thyme leaves, chopped fine
2 tablespoons minced shallot
2 tablespoons balsamic vinegar
2 tablespoons whole-grain mustard
2 teaspoons minced garlic
1 1/2 teaspoons kosher salt
2 teaspoons ground pepper

In a small bowl, whisk together all ingredients.

Marinate fish only up to 1 hour.

Marinate tougher and bigger beef and pork cuts for 8 hours or overnight.

Chicken parts are usually ready in 1 to 4 hours.

Makes about 1 cup
