ITALIAN WEDDING CAKE

ITALIAN WEDDING CAKE

1 tsp. baking soda
1 c. buttermilk
1/2 c. butter
1/2 c. shortening
2 c. sugar
5 eggs, separated
1 tsp. vanilla extract
2 c. flour
1 c. Angel Flake coconut
1 c. chopped walnuts
Cream Cheese Icing
chopped walnuts (for garnish)
Dissolve baking soda in buttermilk and set aside. Cream
butter and shortening; add sugar and beat until creamed. Add
egg yolks and mix thoroughly. Stir in vanilla. Alternately
add flour and buttermilk-baking soda mixture to the butter
mixture. Stir in coconut and chopped walnuts. Beat egg whites
until stiff. Fold into cake batter, turn batter into 3 greased
and floured 9-inch cake pans. Bake in a preheated 350 degrees oven
for 30 minutes or until done. Cool on wire racks. Frost with
Cream Cheese Icing and sprinkle top with chopped walnuts.
Makes 1 cake.
Cream Cheese Icing:
1/4 c. butter
1 (8 oz.) pkg. cream cheese
1 (1 lb.) box confectioners
sugar
1 tsp. vanilla
Cream butter and cream cheese together until well
blended. Add confectioners sugar and vanilla. Mix until
thoroughly creamed.

QUICK VERSION OF ITALIAN WEDDING CAKE

2 pkg. Stella Dora Ammasetti
toast
1 pkg. vanilla pudding
1 pkg. chocolate pudding
Cook pudding according to package directions. Let cool
slightly. In 10-inch square pan layer toast. Pour over this
the vanilla pudding. Put another layer of toast over this in
the opposite direction from the first layer. Cover this with
chocolate pudding. Refrigerate overnight. Serve with whipped
cream on top and crushed nuts.
