Recipe: Refrigerator Pasta (using leftovers, HOME TV Show newsletter, 1990)
Main Dishes - Pasta, SaucesREFRIGERATOR PASTA
8 ounces uncooked pasta (any shape)
1/2 onion, chopped
1/4 cup virgin olive oil
1/2 tablespoon butter
OPTIONAL ADDITIONS:*
1/2 chopped red bell pepper
1 zucchini, sliced
Small bowl of peas
Small dish of cooked, sliced carrots
3 scallions, sliced
2 cooked chicken thighs, skinned and cubed
Spices of choice (to taste): Dried parsley, oregano, lemon pepper, fine herbs (anything but tarragon)
1/2 cup grated Parmesan cheese (for serving)
Cook 1/2 pound of your favorite pasta. Drain, but don't rinse. Set aside.
In a large iron skillet or Dutch oven, saute onion in 1/4 cup virgin olive oil and 1/2 tablespoon butter for flavor.
Go to the refrigerator and see what's left over that might go well in pasta. Add spices of choice and desired amount. Saute vegetables and chicken, if using, until veggies are tender, but still crisp and chicken is heated (2-4 minutes).
Toss cooked pasta into sauteed mixture. Toss in Parmesan cheese, transfer to platter, and serve.
*Almost any leftovers will do.
Makes 4 servings
