PASTRY CREAM
Spread about one cup of this cream in a cooked 9-inch tart shell and arrange sliced fresh fruit on top.
1 1/4 cups milk
2 large egg yolks
1/4 cup sugar
1/2 teaspoon vanilla extract
3 tablespoons all-purpose flour
2 tablespoons unsalted butter, softened
Bring milk to boil in small saucepan over medium heat.
Insert metal blade and add egg yolks, sugar, vanilla and flour. Process until just combined.
With the machine running pour hot milk through feed tube in steady stream.
Return mixture to saucepan and whisk over medium heat until it boils. Reduce heat to low and simmer for 2 minutes, whisking constantly.
Remove from heat and stir in butter. Cool to lukewarm before using.
Makes 1 1/2 cups
