Recipe: Mocha Frosted Spice Cake (Occident / King Midas Flour, 1960's)
Misc.MOCHA FROSTED SPICE CAKE
2 cups flour
1 cup sugar
1 cup firmly packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon allspice
1/2 cup butter, softened
1 cup buttermilk or sour milk*
3 eggs
Mocha Frosting (recipe follows)
Combine in mixing bowl flour, sugar, brown sugar, soda, salt, spices, butter and buttermilk. Blend at lowest speed, then beat at a low speed 1 1/2 minutes. Add eggs. Beat 1 1/2 minutes.
Pour into 13x9-inch pan, greased and floured on the bottom.
Bake at 350 degrees F for 30 to 35 minutes or until cake springs back when touched lightly in center. Cool and frost.
*To sour milk, combine 2 tablespoons vinegar with enough milk to measure 1 cup.
MOCHA FROSTING
3 cups confectioners' sugar
1/3 cup butter, softened
1 teaspoon vanilla
1 teaspoon instant coffee
3 tablespoons hot water
Blend together confectioners' sugar, butter and vanilla. Combine coffee and water. Add to first mixture until fluffy and of spreading consistency.
Makes one (13x9-inch) cake
