QUESADILLA EXPLOSION is:
Fajita-marinated chicken, corn relish, mixed cheese, cilantro, diced tomato and crispy tortilla strips tossed in a citrus-balsamic dressing. Garnished with a chipotle-ranch drizzle and cheese quesadilla wedges.
Good luck with it all, but it all seems pretty cut n dry. Buy all the stuff...then try making a citrus balsamic dressing that tastes the same. Maybe start with a basic recipe like:
7 juicy tangerines
5 lemons
1/2 cup of your very best balsamic vinegar.
Cut the tangerines at the equator, splitting the tangerine into two halves. Section 1-2 halves leaving the pith/membrane, reserve the sections. Extract the juice from the remaining tangerines until you receive 1.5 cups of tangerine juice. Strain the juice through a fine mesh strainer. Extract the juice from the lemons, until you have 1/2 cup. Strain the juice.
Combine all juices and balsamic into a sauce pot and reduce till syrupy or it coats the back of the spoon.
It's going to take a bit of work on your part, for sure. Like finding the corn relish, and getting the chicken right. Maybe the pre-packaged southwestern fajita style grilled chicken from Louis Rich or Perdue Shortcuts will work for the chicken. The corn relish might be tricky, look for something similar in the store...and then on the dressing, this is a beginning. You'll probably have to mess around a bit with it to get it right. Have FUN with it, and keep track as you go along.
