According to its web site, El Torito does not give out recipes anymore. However, I'm lucky to have a small cookbook they sent me many years back before being purchased by another company. SO... in response to a recipe request posted back in February (I'm a newcomer to this site) here is the recipe for enchilada sauce.
EL TORITO ENCHILADA SAUCE
Makes 1 quart
2 tbsp vegetable oil
2 tbsp flour
1/4 cup red chile powder, mild
2 cups beef broth, fresh or canned
2 cups tomato puree, canned
1/2 tsp Mexican oregano, dried, crumbled
1/4 tsp ground cumin
1/2 tsp granulated garlic
1 tsp salt (to taste)
Heat oil in large saucepan. Add the flour to the oil and made a roux. Stir and cook over medium heat for 2 minutes until it becomes brown in color.
Add the chile powder, beef broth, tomato puree, oregano, cumin, garlic and salt to taste to the roux and simmer over low heat for 15 minutes.
