Recipe(tried): Joan's Cheesy Corn Chowder

Joan's Cheesy Corn Chowder
Servings: 6-8

4 strips of bacon*
1 cup chopped onions
1/2 cup chopped celery
1 1/2 cups finely diced potatoes
2 cups water
1 tsp. granulated chicken bouillon
salt & pepper (to taste)
1/4 cup flour
2 cups milk
1 cup light cream
1 pkg. (16 oz.) yellow sweet corn, frozen
8 oz. processed cheese, cubed

Cook bacon, pat dry & crumble. Add onions to bacon drippings & saute until tender. Add celery, potatoes, water and seasonings & simmer until vegetables are tender. Combine flour with milk & stir until smooth. Add to vegetables and cook until chowder thickens slightly, stirring frequently. Add cream, corn and cheese. Heat until cheese is melted and soup is hot.

*Alternative - ham cubes or shredded ham instead of bacon. Saute onions in butter instead of bacon drippings.
