Recipe(tried): King Ranch Chicken Casserole

4 Chicken Breasts
1 cup shredded cheddar cheese
10 corn tortillas
1 can diced RO*TEL tomatoes with chiles
1 cup whole milk
3 tsp. chili powder
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
1 tsp. minced dried onions

Heat oven to 325o. Boil chicken breasts in water for 30 min. or until tender. Remove chicken breasts & shred - reserve stock. Combine 1 cup of chicken stock, 1 cup milk and seasoning ingredients (chili powder, salt, garlic powder, pepper & dried onions). Mix in pan and warm on low heat. Stir in RO*TEL tomatoes and shredded chicken - heat slowly, stirring occassionally.
Cut tortillas into one inch strips and divide in half. Line bottom of a 3-quart casserole dish with 1/2 of the tortilla strips. Pour half of the cooked mixture over tortilla strips. Layer with remaining tortilla strips and pour in the rest of mixture. Top with a layer of shredded cheddar cheese.
Bake at 325o for 30 minutes. For more ZIP drizzle salsa over top before serving.
