Recipe(tried): Labor Day Party - Rest of Recipes - Sweet and Sour Slaw, Chocolate Fudge Sauce, Caramel Sauce, Macaroni and Cheese, Broccoli Salad, Corn Pudding, White Cake with Butter Cream Icing

Menus
Sweet & Sour Slaw

1 Head Green Cabbage
1/2 Cup Sugar
1 Green Pepper (Bell pepper)
1 Carrot
1/2 Cup White Vinegar
1/2 t. celery seed
1/2 t. dry mustard
1/2 Cup Peanut or Canola Oil

Finely chop cabbage, green pepper and carrot. Place in glass bowl and sprinkle with 1/2 cup sugar. In saucepan, bring 1/2 t. salt, 1/2 t. dry mustard, 1/2 cup vinegar and 1/2 cup oil and 1 T. sugar to boil. Lower heat and simmer 1-2 minutes. Pour over cabbage and refrigerate.

P.S. A good quality vinegar can really make a difference if how your cole slaw tastes. I buy mine from a kitchen store. It only costs $2.50 for a bottle. The brand is TTG; white wine vinegar.

Chocolate Fudge Sauce (Really good)

1 stick butter
1/2 Cup or 2 squares Bakers unsweetened chocolate
1/2 Cup Cocoa
1-1/2 Cup Sugar
1 Cup Whipping Cream
2 t. vanilla

Melt butter and chocolate over low heat; stir till smooth. Stir in cocoa, sugar, whipping cream and a pinch of salt. Bring to boil; remove from heat. Add 2 t. vanilla.

Caramel Sauce

1 Cup Dark Brown Sugar
1 Stick Butter
1/2 Cup Whipping Cream
1 t. vanilla
1/2 - 3/4 cup toasted walnuts (Optional)

Melt brown sugar and butter in heavy saucepan over low heat. Slowly, add cream. Remove from heat and add vanilla and toasted walnuts.

P.S. - When buying any sugar, please be sure it says "Pure Cane" on the label. You don't want any imitation sugar in your receipes.

Macaroni & Cheese

1 pkg. Macaroni
2 T. butter
2 T. flour
1-3/4 cup milk
1-1/2T. melted butter
1/2 lb. velveeta cheese, (or little more)
1 cup shredded cheddar cheese

Cook macaroni according to package directions. Drain. Melt butter and blend in flour. Slowly add milk, stirring until mixture slightly thickens. Add cheeses. When cheeses are melted, add macaroni. If you want a browned top on your macaroni, bake 400 degrees for about 20 minutes.

Broccoli Salad

1 Bunch Broccoli Heads
Red onion
raisins
Bacon, fried
sunflower seeds or dry roasted peanuts
1 cup Helmann's mayo
1/2 Cup miracle whip
1/2 cup sugar

Fry bacon and drain. Combine mayo, miracle whip and sugar. Cut off flowerets of broccoli for salad and mix with onion, add dressing and other ingredients to taste.

Corn Pudding

1 can cream style corn
1 can whole kernal corn, drained
1 stick melted butter
1 8oz. sour cream
1 Box Jiffy cornbread mix

Grease casserole dish. Mix corns and butter. Add sour cream and corn muffin mix. Bake 350 degrees for 50 minutes.

White Cake with Butter Cream Icing

My DH's family prefers white cake over just about any other cake. I use to think how boring. Then I decided to come up with a white cake and icing that was as good as I could find. If white cake is what they want, I'll make white cake. This icing is not that unusual, but it was the 6th. one I tried before I settled on it as my favorite. Now, if I have this cake in the house, I am cutting little slivers off it all the time. Does anyone else do this?

For the cake. I got this same tip from two different catering friends. The white cake is a box Duncan Hines Cake mix! They assured me it is very common in catering to use this particular box cake mix. Instead of the 3 egg whites like the box calls for, use 2 egg whites and 1 whole egg. It improves the flavor of the cake.

Buttercream Icing

1/2 cup crisco
1/2 cup butter (no margarine)
1 T. vanilla (good quality, I use a pure vanilla extract from Madagascar Bourbon. If you can find it, it's really good)
4 cup powdered sugar
2 T. milk

Cream butter and shortening in mixer Add vanilla. Gradually mix in sugar, one cup at a time. Add milk, beating till light and fluffy, but don't overbeat.
