I found this recipe in our newspaper and it's great! I've made it twice, using a store bought mix and a name brand mix. Both turned out equally as good. I think you could skip the frosting and dust with powdered sugar if you choose, but the frosting is soooo good. I used a whisk to sift the lumps in the cake mix before adding the other ingredients.
CHOCOLATE CHERRY CAKE
FOR THE CAKE:
1 box devil's food cake mix (2-layer size)
1 (21 oz) can cherry pie filling
2 eggs, slighty beaten
1 tsp almond extract
FOR THE FROSTING:
1/3 cup milk
5 tbsp butter
1 cup granulated sugar
dash salt
1 heaping cup chocolate chips
1 tsp vanilla extract
TO MAKE THE CAKE:
Preheat oven to 350 degrees F. Mist a 9x13-inch baking pan with Pam.
Place all ingredients in a bowl and mix well. Batter will be stiff. Spread into prepared pan.
Bake 40 minutes.
TO MAKE THE FROSTING:
This is a cooked frosting prepared while the cake is baking. It only takes a few minutes, so I waited until the cake was almost finished before I made it.
Bring first 4 ingredients to a boil in a medium saucepan. Boil for 3 minutes. Remove from heat. Add chocolate chips and vanilla extract. Mix with a whisk until the chips are melted.
Pour frosting over hot cake.
