LAMB CURRY
2 lbs lamb stew meat, cut into 1-inch pieces
1 (16 oz) pkg frozen broccoli, cauliflower, and carrots
2 cans (10 3/4 oz each) condensed cream of onion soup
1/2 cup water
2 to 3 tsp curry powder
5 cups hot cooked rice (for serving)
In a 4 quart crock pot stir together the lamb, vegetables, (undiluted) soup, 1/2 cup water and curry powder.
Cover crock pot and cook on LOW for 7 to 8 hours or on HIGH for 3 1/2 to 4 hours.
Serve over hot cooked rice.
Makes 8 servings
