Recipe: Chicken Cacciatore (using stewed tomatoes, carrots and mushrooms, baked)

CHICKEN CACCIATORE

1 whole chicken, cut into 8 pieces, skin removed
2 carrots, peeled, sliced
1 red pepper, ribs and seeds removed, sliced
1 green pepper, ribs and seeds removed, sliced
1 medium onion, sliced into crescents
8 mushrooms, quartered
2 tbsp olive oil
1 cup dry wine (red or white)
1 (10 oz) can stewed tomatoes
1 tsp dried oregano
2 garlic cloves, peeled, minced
1 tbsp chopped fresh parsley

Place chicken pieces in shallow baking dish. Arrange carrots, peppers, onion and mushrooms around chicken.

In bowl, combine olive oil, wine, tomatoes, oregano, garlic and parsley; pour over chicken.

Cover with foil; bake in preheated 300 degree F oven 1 1/2 hours.

SERVING SUGGESTION:
Serve with potatoes, pasta or rice, salad and hot bread.

Makes 4 to 6 servings
