Recipe(tried): Light Sausage & Noodles

This is a colorful, easily-prepared main-dish that's filling enough to satisfy the "glued-to-the-set-and-NOW-we're-hungry" crowd and light enough to please those who have a fatal attraction to all the munchies served during the game, but who still need something substantial to "top up"!

2 large packages, uncooked spaghettini
2 tbsp. salt
4 qts. water

Sausage Sauce

1 small bottle of V-8 or similar vegetable juice
2- 28 oz. tins tomatoes, chopped
1 tsp. oregano
2 lbs. med. Italian sausage, fried, crumbly and drained & set aside
2 large Spanish onions, in small chunks
2 sweet red peppers, in thin strips
1 green pepper, in thin strips
Salt and pepper to taste
1 "deli" container- fresh, grated parmesan cheese

Bring water to boil in large pot. Add 2 tbsp. salt. Add uncooked spaghettini and boil 5-7 mins. or until al dente. Drain and place spaghettini in large spaghetti bowl. Cover and keep in a hot place. (Bowl should be large enough to contain spaghettini and sauce)
Place canned tomatoes and juice in a large pot. Add oregano and bring to a boil. Once boiling, add sausage and mix thoroughly. Add onions, all pepper strips and and stir agin. Salt and pepper to taste. Boil mixture for 2 minutes, add V-8 and remove from heat. Vegetables should be al dente as well. Pour mixture into heated bowl containing spaghettini and mix thoroughly. Serve hot.
Individual salt and pepper and parmesan cheese to taste.
