Recipe(tried): Super Bowl Party!

Misc.

Anyone having a Super Bowl party? We decided to have a neighborhood party and everyone is bringing appetizers or stuff to nosh on during the game. If I get any new great recipes, I'll post them, but in the meantime here are a couple of recipes requested from the Kitchen Table Board:

HONEY-GARLIC MEATBALLS

2 lbs. ground chuck
1 c. dried bread crumbs
3/4 c. milk
1/2 c. onion, minced
2 eggs
1 can water chestnuts, chopped fine
2 tsp. salt

Mix above ingredients well. Shape into 1" size balls. Place in single layer on cookie sheet and bake 15-20 min. at 375 degrees. Drain well and set aside.

Sauce:

2 Tbsp. butter
3 cloves garlic, minced
3/4 c. ketchup
1/2 c. honey
1/4 c. soy sauce (I use Lite)

Melt butter in saucepan and saute garlic briefly. Add ketchup, honey and soy sauce. Bring to a boil, reduce heat, cover and simmer five minutes. Add meatballs to sauce. Return to a boil and simmer uncovered 5-10 minutes, stirring occasionally or until sauce glazes meatballs. Makes 55-60.

This is good on a relish tray--something a little different:

DILLED CAULIFLOWER

1 head cauliflower
3/4 c. Italian dressing
1 Tbsp. chopped pimento
1 Tbsp. onion, finely chopped
1/2 tsp. dried dill weed

Wash and break cauliflower into flowerets. Cook in a small amount of water until tender-crisp (about 6-8 minutes). Combine remaining ingredients and pour over cauliflower. Toss lightly. cover and chill at least 4 hours, stirring occasionally. Drain before serving. Yield: 18 appetizer servings.
