Recipe(tried): lil - use leftover chicken

Misc.
You will need:
Leftover poultry
Soft tortilla shells
sharp cheese
diced red and green peppers
diced onion - green or white
salsa
jalapeno peppers or your choice of hot peppers

Simmer cooked fowl on low temp with salsa for aprox. 25mins.
Spray casserole dish with non stick cooking spray. Lay 2 tortillas on the bottom of the dish.
Spoon in 1/2 of chicken mixture. Sprinkle peppers over top and sprinkle with cheese. Add another tortilla and layer until you run out of your ingredients. Save enough cheese to cov er the top.
Bake in 350 degree F oven until bubbly and hot.
Toppings:

Sour Cream
Cold chopped peppers and olives
Guacamole

Slice into serving pieces and top with your favourite toppings. ...
