Recipe(tried): Lowfat Fettucine Alfredo

Light Fettuccine Alfredo

This is a delightful and easy meal to prepare.

Ingredients:

1 1/3 cups skim milk.
2 small garlic cloves, minced.
2 tsp. all-purpose flour.
2 tbsp. fat-free cream chesse.
1 cup grated Parmesan chese.
1 tbsp. plus 2 tsp. Molly McButter Natural Butter Flavor Sprinkles.
4 cups hot cooked fettuccine.

Preparation:

In a medium saucepan over high heat, whisk milk, garlic, flour and cream chesse. Bring to a boil, whisking constantly. Reduce heat and simmer for 2 minutes or until thickened. Add Parmesan chesse, whisk until blended. Remove from heat. Stir in Molly McButter. Pour sauce over hot fettuccine. Sprinkle with parsley and pepper if desired.
Servings: 4.

LOW FAT FETTUCINE ALFREDO WITH SHRIMP

1 lb. shrimp, peeled and deveined
Cajun seasoning
cooking spray
1 tbsp. low fat margarine
2 cloves garlic, peeled and chopped
1 tbsp. flour
1 1/3 cups skim milk
2 tbsp. fat free cream cheese
1 1/2 cups freshly grated Parmesan cheese, divided
10 oz. fettucine, cooked according to package directions

Skewer shrimp on 4 wooden skewers. Spray one side with cooking spray, sprinkle on Cajun seasoning, turn over and repeat. Heat grill or broiler. Cook shrimp 2 to 3 minutes on each side, timing it so that shrimp are
done at same time as pasta and sauce.
Bring water to boil in large pot for fettucine. Melt margarine in nonstick pan over medium heat. Add garlic and
saute 1 minute. Stir in flour. Gradually add milk, stirring with a wire whip until blended. Cook 8 minutes, or until thick and bubbly, stirring constantly. Add fettucine to boiling water at same time you start the 8 minute timer for the sauce. Stir cream cheese into sauce and cook 2 minutes. Add 1 cup Parmesan cheese to sauce, stirring constantly until melted. Drain fettucine. Pour sauce over fettucine and toss well to coat. Divide fettucine among four bowls and top each with a skewer of shrimp. Pass remaining 1/2 cup Parmesan and black pepper to sprinkle on top. Serves 4.

Has about 10 grams fat per serving rather than the 60 grams per serving of regular fettucine Alfredo.
