Recipe: Classic Iced Green Tea

CLASSIC ICED GREEN TEA

2 cups fresh, cold water
4 1/2 teaspoons (6 grams) medium-size loose-leaf green tea or 3 green tea bags

Put the water in a kettle and heat to 175 to 180 degrees. Or bring the water to a boil, then remove the kettle from the heat, prop open or remove the lid and let the water sit for 1 minute.

Place the tea leaves or tea bags into the infuser of a small ceramic, glass or clay teapot or place the tea directly into the teapot if there is a built-in strainer in the spout. If your teapot does not have an infuser or strainer, you can use a hand-held strainer placed over your cups to catch the tea leaves. Pour the heated water over the tea, put the lid back on and steep for 20 minutes.

Remove the infuser from the teapot and set the teapot aside to cool or strain the tea into a heatproof container. When the tea has cooled, pour the tea into a glass container and place it in the refrigerator to chill. Serve in tall glasses over ice.
