Recipe: Wacky Spice Cake (no eggs or dairy)

WACKY SPICE CAKE

1 1/2 cups sifted all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon allspice
1/2 teaspoon ground cloves
1 teaspoon baking soda
1 cup granulated sugar
1 teaspoon vinegar
1 teaspoon vanilla extract
1/3 cup vegetable oil
1 cup cold water

Preheat oven to 350 degrees F.

Sift together the first seven ingredients and pour the mixture into an ungreased 8 x 8 inch baking pan and level it off.

Poke three holes into the dry cake mixture forming a triange with the holes each being a couple inches apart.

Pour vinegar into the first hole. Pour vanilla extract into the second hole. Pour vegetable oil into the third hole.

Pour 1 cup of cold water evenly over the top of the cake mix. Stir and mix well with a fork.

Bake at 350 degrees F for 25 to 30 minutes, or until tester comes out clean.
