Recipe(tried): Luncheon Menu and Recipes

This is a menu that I have used many times and is very good..

Hot chicken Salad
Baked Ham
Marinated vegetables
Baked Peach halves with Mincemeat
sour Cream Gems
Ice Cream with Creme DeMenthe over the top.
Cookies
Iced Tea and Coffee

Hot Chicken Salad
Serves 12
4 cups cooked chicken chopped in bite size pieces.
1 cup finely chopped onion
2 cups finely chopped celery
2 cans sliced water chestnuts
3 cups cooked rice
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 teaspoon white pepper
2 Tablespoons lemon juice
2 Tablespoons Worcestershire sauce
1/2 teaspoon Tabasco sauce
2 cups grated sharp cheddar cheese
1 1/2 cups mayonnaise
1/2 cup chicken broth
6 cups crushed potato chips

Cook celery and onions in a small amount of water until tender...Drain well.
In a large bowl mix all the ingredients except the mayonnaise, chicken broth and potato chips.
In another bowl, combine mayonnaise and chicken broth, mixing well.
Blend into the other ingredients.
Spoon into a buttered baking dish and top with the crushed potato chips.
Bake 30 to 45 minutes in a preheated 350 degree oven or until hot and bubbly throughout.
Note:
This freezes well so can make ahead of time and thaw in the refrigerator before baking..Do not cover with potato chips until ready to bake.



Marinated Vegetable Salad
Serves 10

1 (16oz)can French cut green beans, drained
1 (16 oz) can LeSeur Peas, drained
1 (16 oz) can shoe peg corn, drained
1 cup chopped green pepper
1 cup chopped celery
1 cup chopped onion
1 small jar chopped pimento, drained
1/2 teaspoon pepper
1 teaspoon salt
1 Tablespoon water
3/4 cup vinegar
1/2 cup salad oil
1 cup sugar
Combine all the vegetables and seasonings and place in a covered container. Set aside.
Make the dressing.
Combine vinegar, sugar, salad oil in a sauce pan. Bring to a boil and cook to dissolve sugar. Cool.
Pour over the vegetables. cover and refrigerate 24 hours before serving..To serve: Drain well.
This will kepp well in the refrigerater several days.

Baked Peach Halves with mincemeat
Peach halves
Mincemeat
butter
Place the number of peach halves that you will need to serve. Spoon mincemeat in the cavity of the peach..put a dab of butter on top.
Bake in 350 degree oven until hot and butter has melted.

Sour Cream Gems.
Serves 12
2 cups self-rising flour
1 cup butter, softened
1 cup sour cream
Cut butter and flour together with pastery blender
Add sour cream and stir until moistened.
Spoon into greased muffin tins and bake 350 degrees for 20 to 25 minutes or golden.
(I use little minature muffin pans)

Ice Cream with Creme DeMenthe
spoon vanilla ice cream into parfait glasses.
Spoon a couple of Tablespoons Creme DeMenthe over the ice cream...Serve with cookies of your choice..
(If anyone objects to the alcohol in the Creme DeMenthe non alcoholic can be used).
A red cherry on top makes it look festive for Christmas.
