Recipe: Luscious Black Bean Soup

LUSCIOUS BLACK BEAN SOUP

2 tsp extra virgin olive oil
2 cups chopped onions
1 large sweet green pepper, chopped
1 large sweet red pepper; chopped
1/2 cup cilantro or coriander leaves
1 tsp dried oregano leaves
1 bay leaf
1 cup defatted; low-sodium chicken broth
1 tsp salt
3 cans (15 oz. each) black beans, including the liquid
1/4 cup cider vinegar
1 tsp clover honey

Add the oil to a large saucepan and place over medium heat. When the oil is hot, add the onions and peppers. Cook, stirring for 4 to 5 minutes until the onion is softened, but not browned.

Add the cilantro, oregano and bay leaf and saute for 1 minute. Add the chicken broth and salt; bring to a simmer.

Add the black beans with their liquid, turn the heat to low, cover and simmer for 5 minutes, or until heated through. Remove from the heat, stir in the vinegar and honey.

Serves 6

LeanTip:
A dollop of non-far sour cream sprinkled with some snipped chives is a tasty, guiltless addition.
