MARINATED MIXED VEGGIES
FOR THE MARINADE:
1 1/2 cups red wine vinegar
3/4 cup olive oil
1/2 cup sugar
1 tablespoon Cajun seasoning
1 tablespoon hot sauce
1 tablespoon minced garlic
FOR THE VEGETABLES:
1 sweet onion, sliced
2 large red bell peppers, chopped
2 large green bell peppers, chopped
2 cans (15 ounces each) green beans, drained
1 head cauliflower, broken up
1 bunch broccoli, broken up
1 cup fresh mushrooms, sliced
1 1/2 cups cherry tomatoes
In a medium saucepan, combine first 6 ingredients, and bring to a boil. Remove from heat and cool.
In a medium saucepan over medium-high heat blanch onion, bell peppers, and green beans for one minute.
Combine all vegetables in large, non-aluminum bowl. Pour in marinade and mix until vegetables are thoroughly coated; cover. Allow to chill in refrigerator for several hours before serving.
