BILLIE'S HOUDINI CHICKEN SALAD
"Billie Jo Flanagan is a friend of mine. She is also my personal trainer - and a two-time national championship gymnast! She created this amazing salad using the creaminess of Greek yogurt. My mama named it Houdini salad because it magically escapes the high calories of a traditional Waldorf salad while tasting just as delicious!"

4 boneless, skinless chicken breasts
1/2 cup low-fat plain Greek yogurt
1/2 cup seedless Concord grapes, halved
1/2 cup slivered almonds
1/2 cup finely chopped pecans
1/4 cup dried cranberries
2 small Granny Smith apples, finely diced
1/2 small red onion, finely chopped
Salt and freshly ground black pepper
Toasted bread or crackers, for serving
In a large stockpot over high heat, cover the chicken with water and bring to a boil. Cook for 20 minutes, or until tender. Drain and set aside to cool completely, about 20 minutes, then shred or dice.
a large bowl, mix together the chicken, yogurt, grapes, almonds, pecans, cranberries, apples, and onion. Season with salt and pepper to taste.
Serve on toasted bread or with crackers.
Makes 4 servings
