Charlotte, I use my Nesco roaster for everything. I make soup, chili, roasts and of course meat loaf.
The heat is in the sides, not the bottom.
I do not use a rack. I cook my meat loaf like I would in the oven, if it says 350 degrees F for whatever, that is what I cook it. If in doubt if done, you can alays cut into it.
I love my Nesco and have about worn mine out.
